One of my favorite things to do is bake cookies with Peyton. When I was little, I remember my mom baking and filling our whole dining room table full of treats during the holidays. She would wrap them up in decorative papers and give them to friends, family, and neighbors for the holidays. She was a fabulous baker and everyone looked forward to receiving a basket full of goodies from her during the holiday. Now, I like to bake treats with Peyton. This year, I’m teaching her how to make chocolate covered spritz cookies.
This is a really fun and fairly easy project perfect for little ones to help with. You’ll need the following –
1½ cups (375 mL) butter (3 sticks), softened
1 cup (250 mL) sugar
1 egg
1 tsp (5 mL) vanilla extract
3 to 3½ cups (875 mL) all-purpose flour
Spritz Cookie Press
4 bags Green Melting Chocolate
Sprinkles
In a large mixing bowl combine the butter, sugar, egg and vanilla extract, beat until smooth. Slowly mix in the flour, you may use less than 3 cups but you’ll want to keep adding until it has a moist dough consistency.
Next, fill your cookie press and use your tree stencil. Press out trees on a cookie sheet and bake at 375 for 8-12 minutes, until golden brown.
Remove from oven and let cool on cookie rack. Repeat until all your cookies are baked.
Once the cookies are cool it’s time to dip them in chocolate! Heat the chocolate in a microwave-safe bowl in 30-second intervals until the chocolate is melted and smooth, remember to stir between every 30 seconds. Dip the cookies in the chocolate, shake off excess chocolate and place on wax paper.
Use sprinkles to decorate while the chocolate is cooling. The sprinkles will stick to the chocolate, this is the perfect part for the little ones to help with. Peyton had a blast decorating her trees with sprinkles.
Once the chocolate has hardened they’re ready to eat! These cookies are super easy and so much fun for the whole family to make. One batch makes 6-7 dozen cookies.
