First, preheat the oven to 400.While the oven is preheating chop up your onion and pepper.Combine the ground meat, onions, pepper, and garlic in skillet. Cook until the meat is cooked all the way through and the onions are soft.While the meat is cooking prep the casserole dish.Spray the bottom of the dish with the cooking spray.Line the bottom of the dish with a layer of crushed chips.Check on the meat mixture, stir it frequently. Once the meat is cooked add in the taco seasoning and taco sauce. Stir until it is combined then set aside to cool.While the meat mixture is cooling it's time to make the sour cream filling.In a medium-size bowl, combine the cottage cheese and sour cream.Now, take the meat mixture and pour over the crushed tortilla chips in the casserole dish.Then, pour and spread the sour cream mixture of the top.Cover the sour cream mixture with the Mexican cheese.Lastly, sprinkle a few more crushed tortilla chips over the top and place in the oven.Bake for 30 minutes, uncovered.I topped ours with fresh salsa and sliced table onions.
