4lbBoneless Pork Roast, fat trimmed and cut into 3 inch cubes
1CBeer, Pilsners work well or use Chicken Broth
1White Onion, diced
4 ClovesGarlic, minced
1TBSPChipotle Powder
2tspGround Cumin
1tspBlack Pepper
1tspChili Powder
1tsp Kosher Salt
Instructions
First, trim the fat off the pork roast and cut it into 3-inch chunks. In a small bowl, combine the chipotle powder, Cumin, pepper, chili powder and salt. Place the pork roast into the slow cooker. Pour the beer into the slow cooker. Dice the onion and add to the slow cooker. Pro tip - My family prefers really small onions so the kids don't notice them. I use a food processor to get them super fine. Mince the garlic and sprinkle over the pork roast. Sprinkle the seasoning mixture over the roast. Put the cover on and cook low for about 7-9 hours or high for 4-5 hours. You will know the pork is done when it is easy to shred. Remove the pork from the slow cooker and shred with 2 forks. Spread the shredded pork on a baking sheet in an even layer. Drizzle a little bit of the juices on top of the pork and broil for 3-5 minutes, just until the edges are crisp. Place the shredded pork into a bowl and drizzle a little more juice on it. Give it a good stir and enjoy!Your carnitas will be crispy and perfect for tacos!
