3lbdBeef Chuck Roast
2tbspOlive Oil
1tspSalt
1/2tspDried Leaf Oregano
1/2tspCumin ground
1/4tspCloves, ground
2Bay Leaves
2clovesGarlic, minced
2Chipolte Peppers, minced
1tbspAdobo Sauce, the sauce the peppers came in
1COnion, diced
1/2CWater
Instructions
In a large skillet heat the olive oil. Once the olive oil is heated sear the roast on all sides. Place the roast in the crockpot. In a small bowl mix together the salt, oregano, cumin, and cloves. Sprinkle over the roast. Next, toss in the bay leaves. Then top the roast with garlic, Chipotle peppers, and adobo sauce. Pour the water into the crockpot without washing the seasoning off the roast. Place the cover on and cook on low for 8-10 hours. Once the cooking time is over, remove the lid and take out the bay leaves. Shred the beef with either 2 forks or meat claws. Serve with your favorite toppings and enjoy!
