First, wash and try your berries. Slice your strawberries in half, I also suggest taking the tops off. Then people can just pop them in their mouth and enjoy. Plus, you won't find strawberry tops all over later on, trust me on this one. Next, place the cream cheese, powdered sugar, and vanilla in a bowl and beat until fluffy. It works best in a stand mixer but if you only have a hand mixer it'll work, just may take a smidge longer. Taste a little and see if it's sweet enough, if not, add a little more powdered sugar. Fold in the cool whip.Once you have the perfect consistency and flavor, it's time to pipe the cheesecake mixture into the strawberries!Grab a pastry bag and a large tip. I used Wiltons 1M. Fill the bag with the cheesecake filling and pipe it on each strawberry. Place a blueberry or a few blueberries depending on their size on top of the cheesecake filling. Place in the fridge to keep chilled. Serve and enjoy!
