Deep Fryer or Large Pot
2CAll Purpose Flour
1 1/2tspBaking Powder
Fill your deep fryer or a large pot with the canola oil. Set the deep fryer to 350 degrees. If you are using a large pot, heat over medium to high heat until it reaches 350 degrees. In a bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. It's best to whisk the mixture to ensure there are no clumps. Set aside.In another bowl, whisk together the milk, granulated sugar, eggs, and vanilla extract until combined.Next, add the dry ingredients to the wet ingredients and mix until just combined.Check your oil, once it has reached 350 you are ready to start cooking!Pour your funnel cake batter into a pancake batter squeeze bottle. This part you are going to want to make sure the kids and animals are not near by. There could be a little oil splatter.Take your bottle and carefully squeeze the batter into the oil in a circular motion overlapping itself.Cook until lightly golden brown on the bottom (about 1-2 minutes), then carefully flip with tongs or a flat spatula and allow to cook for an additional 1-2 minutes or until cooked through.With your tongs, carefully remove the cooked funnel cake and place on a plate lined with paper towels to absorb any excess oil.Let the funnel cakes cool for a few minutes. Sprinkle with powdered sugar. Top with your favorite toppings. I found it easiest to cook one funnel cake at a time. Anything else just overcrowded the pan.
