You can make as much or as little acorn squash as you would like but I would recommend putting enough in the slow cooker so they can stand up easily and not tip over. I can fit 2-3 acorn squash in my slow cooker depending on the size. Slice the acorn squash in half and remove the seeds. If there is a stem you will want to remove that as well. Pour 1 c water in to the slow cooker. Arrand the acorn squash in the slow cooker so they stand up. The seasoning is just an estimate. Sprinkle the cinnamon and nutmeg on the acorn squash. Place the brown sugar in each squash. Add a tsp to 2 tsp depending on how large your acorn squash are to each squash.Place the lid on and cook on high for about 3 to 3.5 hours. Bigger squash will take longer while smaller squash will cook quicker. You can test the squash around the 3 hour mark. If you can easily pierce it with a fork then they are done. If not, let them cook a little while longer. Once the squash are done, carefully remove them from the slow cooker and enjoy! We like to add a little salt and pepper to taste at the end. Enjoy!They reheat well the next day in the microwave too.
