How to Make Pumpkin Chocolate Chip Cookies
Preheat the oven to 350°F and line two large baking sheets with parchment paper.
Place the butter in a medium microwave-safe bowl and heat until melted. Allow it to cool slightly.
Add the pumpkin puree, granulated sugar, brown sugar, molasses, and vanilla extract to the melted butter.
Whisk until the ingredients are thoroughly combined.
In a separate mixing bowl, whisk together the flour, pumpkin pie spice, baking soda, and kosher salt.
Gradually add the dry ingredients to the pumpkin mixture, stirring until a soft cookie dough forms. Avoid overmixing once the flour has been incorporated.

Shape the Cookies
