Shortcut Tip - You can purchase a container of mirepoix at your local grocery store which is a mix of chopped carrots, onion and celery to save time. Place your slow cooker in a safe location, away from kids with about a foot clearance around it for safety. Next, add your chicken, onion, carrots, celery, basil, Italian seasoning, Poultry seasoning, salt and broth to the slow cooker. Place the cover on the slow cooker and cook on low for 6-8 hour or if you are pressed for time on high for 4-5 hours. When the chicken is cooked is you can either shred it in the slow cooker using two forks or you can take it out and shred the chicken. Then add the chicken back to the slow cooker. Make a slurry with the cornstarch and water in a small bowl. Then pour the slurry into the slow cooker. Add the evaporated milk and gnocchi to the slow cooker and let cooker for 45 minutes. You may need to let it cook a little longer if the soup has not thickened or if the gnocchi is not soft. While you are waiting for the soup to thicken it's time to fry up the bacon. Slice the bacon into bite size chunks. In a frying pan, fry the bacon pieces until they are crispy. Once the bacon pieces are crispy, remove them from the pan and set them on paper towels to help remove the excess grease. Remove majority of the bacon grease from the pan and then sautee the garlic for about a minute. Add the spinach to the fryng pan and stir until it's wilted. Once the soup has thickened, add the spinach, garlic and bacon mixture to the slow cooker and stir to combine. Enjoy!If the soup is too thick, either add a little more chicken broth or water to thin it out. You can season the slow cooker with additional salt and pepper or let each person season their bowl of soup to their own preference. Crusty bread goes perfectly with this soup.
