Instructions
You will want to use a 3-quart Crockpot for this recipe. Anything bigger and it'll overcook and burn to the sides so you'll want to reduce the time. This recipe works best if you prep all your ingredients first. First, chop the spinach and cube the cream cheese. Next, add the spinach, artichoke hearts, cream cheese, sour cream, Mozzarella cheese, Parmesan cheese, onion, and garlic to the crockpot. You can use low-fat options of the sour cream and cream cheese if you prefer I used regular sour cream and cream cheese and it was a hit!Once everything is in the Crockpot, give it a good stir and put the lid on. Cook on low for 2 hours or high for 1 hour. Once the cook time is up, remove the lid and give it a good stir to combine everything. Salt and pepper to taste. Serve with crackers, sourdough, pita chips, bagel chips or other chips to dip. You can transfer this to a serving dish if you would like or leave in the Crockpot on the warm setting stirring occasionally. Enjoy!
