Crockpot Spinach Artichoke Dip

One of my favorite appetizers to order when we go out is spinach artichoke dip. I just love it! So I thought about making it at home with a Crockpot so that we could enjoy it with friends and family. And it was a hit! This Crockpot Spinach Artichoke Dip makes a ton so make sure you have enough people to help enjoy it.  It’s a dish that you can toss together while you are doing those last-minute chores around the house before company arrives and it will literally cook itself but will taste like you have put a ton of effort in.

To make a batch of our Crockpot Spinach Artichoke Dip you will need the following –

Small Crockpot or Slowcooker

10 ounces Spinach, chopped
1 can Artichoke Hearts, quartered and drained
8 ounces Cream Cheese (can use low fat if desired) cut into 1-inch cubes
1 C Sour Cream (can use light)
1 C Mozzarella Cheese, shredded
1/2 C Parmesan Cheese, grated
1/3 C Red Onion, chopped
4 cloves Garlic, minced
1/2 tsp Black Pepper
1/4 tsp Kosher Salt

You will want to use a 3-quart Crockpot for this recipe. Anything bigger and it’ll overcook and burn to the sides so you’ll want to reduce the time.

This recipe works best if you prep all your ingredients first.

First, chop the spinach and cube the cream cheese.

Next, add the spinach, artichoke hearts, cream cheese, sour cream, Mozzarella cheese, Parmesan cheese, onion, and garlic to the crockpot.

You can use low-fat options of the sour cream and cream cheese if you prefer I used regular sour cream and cream cheese and it was a hit!

Once everything is in the Crockpot, give it a good stir and put the lid on.

Cook on low for 2 hours or high for 1 hour.

Once the cook time is up, remove the lid and give it a good stir to combine everything. Salt and pepper to taste.

Serve with crackers, sourdough, pita chips, bagel chips or other chips to dip.

You can transfer this to a serving dish if you would like or leave in the Crockpot on the warm setting stirring occasionally.

Enjoy!

Hope you are enjoying our Crocktober recipes! Be sure to check out our other slow cooker recipes and come back tomorrow to see what’s next.
