First, wash your peppers. You can use green, yellow, red or a variety of them. Then slice them into strips. Line the bottom of the slow cooker with the pepper strips. Then place the chicken thighs down on top of the pepper strips in a single layer. Next, in a bowl, mix together the chili powder, smoked paprika, salt, pepper, and cumin. Sprinkle this on the chicken thighs. Sprinkle the garlic on top of the chicken. In another bowl, mix together the olive oil and lime juice. Pour that into the slow cooker. Pour the salsa verde on top of the chicken. Place the cover on top of the slow cooker and cook on low for 6-8 hours. This is perfect served over rice with your favorite toppings. Enjoy!
