Slow Cooker Salsa Verde Chicken

Crocktober is almost over, I hope you have been enjoying the variety of recipes that I have been sharing with you. Today, we are making Salsa Verde Chicken in the slow cooker. Our slow cooker Salsa Verde Chicken was a total hit! And it’s a recipe that you can start before work and it’ll be done when you get home from work.

Slow Cooker Salsa Verde ChickenTo make Slow Cooker Salsa Verde Chicken you will need the following –

2 lbs Chicken Thighs, bone-in skin-on
1 tbsp Extra Virgin Olive Oil
2 Bell Peppers
3 cloves Garlic, minced
1 C Mild Salsa Verde
1/2 C Lime Juice
1 1/2 tsp Chili Powder
Salt
Pepper
1/2 tsp Smoked Paprika
1/2 tsp Cumin

First, wash your peppers. You can use green, yellow, red or a variety of them. Then slice them into strips.

Line the bottom of the slow cooker with the pepper strips.

Then place the chicken thighs down on top of the pepper strips in a single layer.

Next, in a bowl, mix together the chili powder, smoked paprika, salt, pepper, and cumin.  Sprinkle this on the chicken thighs.

Sprinkle the garlic on top of the chicken.

In another bowl, mix together the olive oil and lime juice. Pour that into the slow cooker.

Pour the salsa verde on top of the chicken.

Place the cover on top of the slow cooker and cook on low for 6-8 hours.

This is perfect served over rice with your favorite toppings.
