Grasshopper Mocha Cafe Cookies & Giveaway

Who doesn’t love a good cookie?? Now if that cookie could give you a little burst of energy wouldn’t you like that too? These Grasshopper Mocha Cafe cookies are the perfect cookie to start the morning with. Filled with chocolate, mint and a touch of grasshopper coffee they are full of flavor and wake up your taste buds.

You will need the following to make your own batch of Grasshopper Mocha Cafe Cookies –

1 1/2 C Butter, unsalted
1 1/2 C Brown Sugar, dark
1/2 C Sugar
2 Eggs
1 tsp Mint Extract
3 tsp Vanilla Extract
2 C All-Purpose Flour
4 tsp Cornstarch
2 tsp Baking Soda
1 tsp Salt
1 1/2 tsp (or 1 KCup) Slice Grasshopper Pie Coffee Grounds
1 C Andes Mint Baking Chips

These cookies are really easy to make. You can use either a stand mixer or hand mixer, whichever you prefer.

You’ll want to preheat your oven to 350 degrees. Also, line your baking sheet with parchment paper.

First, you are going to mix together the flour, cornstarch, baking soda, salt, and Slice grasshopper pie coffee grounds with a whisk, then set aside.

In another bowl, cream the butter, brown sugar and sugar together for about 2 minutes. You’ll be finished when the mixture is light and fluffy.

Next, add the eggs, mint extract, and vanilla extract and beat for another 2 minutes.

Slowly add in the flour mixture, mixing until it is all combine.

Using a wooden spoon or spatula mix in the Andes Mints.

With a medium cookie scoop, scoop the dough onto the baking sheet. Allow about 2 inches between cookies. There is minimal spread for these cookies so they will be smaller.

Bake 10-13 minutes, until the edges are turning golden brown. They do cook a little more while they are cooling so you want to take them out when you start to see the golden brown.
