Minnesota State Fair Loaded Totchos
No trip to the Minnesota State Fair is complete without indulging in all the amazing food. Every year we look forward to trying both the newest creations and the classic favorites that have become State Fair traditions.
One dish we always find ourselves craving is Totchos.
If you’ve never had them before, think of them as loaded nachos—but instead of tortilla chips, they’re made with crispy golden tater tots. It’s the perfect combination of crunchy potatoes, creamy toppings, gooey cheese, and savory bacon.
This homemade version puts a delicious twist on the classic by adding a creamy ranch sour cream sauce that takes these totchos to the next level. Whether you’re celebrating the Great Minnesota Get-Together at home or just looking for an easy game day appetizer, this recipe is always a crowd-pleaser.

How to Make Minnesota State Fair Loaded Totchos
Step 1: Cook the Tater Tots
Bake or air fry the tater tots according to the package directions until they’re crispy and golden brown.
I prefer baking them because it uses less oil, but an air fryer works wonderfully too if you want extra crispy tots.
Step 2: Make the Ranch Sauce
While the tater tots are cooking, combine:
- 1 cup sour cream
- 1 cup bottled ranch dressing
Mix until smooth and creamy.
Tip: If you only have ranch seasoning, use about 1 tablespoon of seasoning and add a splash of milk until you reach a pourable consistency. Keep in mind that ranch seasoning packets are much saltier than bottled ranch dressing, so taste before adding extra salt.

Step 3: Assemble the Totchos
Transfer the hot tater tots to a serving platter or individual plates.
Drizzle the ranch sour cream sauce over the top.
Sprinkle generously with shredded cheddar cheese while the tots are still hot so the cheese begins to melt.
Top with crispy bacon bits.
Finish with fresh parsley for a pop of color if desired.
Serve immediately while everything is warm and cheesy.

Frequently Asked Questions
Can I make these in the air fryer?
Absolutely! Air-fried tater tots become wonderfully crispy and work perfectly for this recipe.
Can I prepare these ahead of time?
You can mix the ranch sauce ahead of time, but wait to assemble the totchos until just before serving.
What cheese works best?
Sharp cheddar is our favorite, but Monterey Jack, Colby Jack, Pepper Jack, or a Mexican cheese blend all taste fantastic.

Ingredients
- Tater Tots
- 1 C Sour Cream
- 1 C Ranch Dressing
- 1 C Shredded Cheese
- Parsely, optional
- Real Bacon Bits
Instructions
- Bake or fry your tater tots per the directions on the package. I baked mine in the oven because I feel like I've done a ton of fried foods this month! Thought I would do the somewhat healthier option. While the tater tots are baking it's time to make the ranch-flavored sour cream. Take 1 c of sour cream with 1 c Ranch dressing. You want the bottled dressing, not the seasoning. If you only have the seasoning you can use about 1 tbsp and then a splash of milk to thin it out. The main difference will be the salty factor. The seasoning packet is very salty compared to the bottled ranch dressing. Mix the ranch and sour cream together until they are well combined.Once the tater tots are finished, remove them from the over or fryer and let them sit for a few minutes.First, plate the desired amount of tater tots on a plate.Pour over the ranch-flavored sour cream on the tater tots.Sprinkle shredded cheese on top of the sour cream and tater tots.Sprinkle a few bacon bits on top of the cheese. Then get ready to enjoy!
