Minnesota State Fair Nacho Totchos Recipe (Easy Copycat)

Minnesota State Fair Nacho Totchos (Easy Copycat Recipe)

If you’ve ever walked through the Minnesota State Fair, you know one thing for sure—everything tastes better when it’s piled high with toppings.

We’ve already made one version of our favorite State Fair totchos, but this recipe takes things in a completely different direction. Instead of creating a loaded baked potato-inspired dish, we’re turning crispy tater tots into a giant plate of nachos.

That’s right…nachos without the chips.

Seasoned tater tots become the perfect base for melted cheese, fresh vegetables, salsa, guacamole, and sour cream. It’s everything you love about nachos with an extra crispy potato twist.

Whether you’re feeding your family, hosting game day, or bringing the State Fair home, these Nacho Totchos are always a hit.

Why You’ll Love This Recipe

  • Inspired by the Minnesota State Fair
  • Easy weeknight dinner or appetizer
  • Ready in about 30 minutes
  • Perfect for parties and football season
  • Completely customizable

Ingredients

  • 1 bag frozen tater tots
  • 2 teaspoons taco seasoning
  • 2 cups shredded Mexican blend cheese
  • Sliced black olives
  • Diced tomatoes
  • Diced onion
  • Shredded lettuce
  • Sour cream
  • Salsa
  • Guacamole

How to Make Nacho Totchos

Step 1: Season the Tater Tots

Place the frozen tater tots into a large mixing bowl.

Sprinkle the taco seasoning over the tots and gently toss until they’re evenly coated.

This simple step adds tons of flavor before they even go into the oven.

Step 2: Bake Until Crispy

Lightly spray a baking sheet with nonstick cooking spray.

Spread the seasoned tater tots into a single layer.

Bake according to the package directions until they’re crispy and golden brown.

Step 3: Melt the Cheese

During the last 2–3 minutes of baking, sprinkle the shredded Mexican cheese blend evenly over the hot tater tots.

Return the pan to the oven until the cheese is melted and bubbly.

Step 4: Add the Toppings

Transfer the cheesy tater tots to a large serving platter or individual plates.

Top with:

  • Diced tomatoes
  • Black olives
  • Onion
  • Shredded lettuce
  • Sour cream
  • Salsa
  • Guacamole

Serve immediately while everything is hot.

Optional Toppings

Want to make these even more loaded?

Try adding:

  • Taco-seasoned ground beef
  • Shredded chicken
  • Pulled pork
  • Pickled jalapeños
  • Green onions
  • Cilantro
  • Cotija cheese
  • Queso
  • Corn
  • Black beans

Tips for the Best Totchos

  • Bake the tater tots until they’re extra crispy so they hold up under the toppings.
  • Season the tots before baking for maximum flavor.
  • Use freshly shredded cheese for the best melt.
  • Wait to add the cold toppings until just before serving.

Frequently Asked Questions

Can I make these in the air fryer?

Absolutely! Air fry the seasoned tater tots until crispy, then transfer them to an oven-safe dish, add the cheese, and broil for a minute or two until melted.

Can I make these vegetarian?

Yes! Simply leave off any meat toppings or add black beans for extra protein.

What cheese works best?

A Mexican blend is our favorite, but cheddar, Monterey Jack, Pepper Jack, or Colby Jack all melt beautifully.

Can I make these ahead of time?

The toppings can be prepped ahead, but the tater tots are best served immediately after baking so they stay crispy.

Make It a Totcho Bar
