Pumpkin Spice Latte Popcorn

If you love pumpkin spice lattes, this Pumpkin Spice Latte Popcorn is such a fun way to turn that classic fall drink into a sweet and crunchy snack.

This recipe combines two different flavored popcorns—one coated in warm pumpkin pie spices and another flavored with real coffee. Once they’re baked and cooled, they’re tossed together with pumpkin-flavored candy for a snack mix that tastes like pumpkin spice latte season in a bowl.

It’s perfect for fall movie nights, Halloween parties, after-school snacks, or packaging in cute bags for an easy fall treat.

Pumpkin Spice Latte Popcorn Recipe

Makes: Approximately 8 cups

Pumpkin Pie Spice Popcorn

  • 3 cups popped popcorn
  • 3 tablespoons butter
  • ¼ cup granulated sugar
  • 2 tablespoons water
  • ¼ cup dark corn syrup
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice

Coffee Popcorn

  • 3 cups popped popcorn
  • 3 tablespoons butter
  • 3 tablespoons very strong brewed coffee
  • ¼ cup granulated sugar
  • ¼ cup dark corn syrup
  • 1 teaspoon finely ground coffee

Add-Ins

  • 1 cup pumpkin pie flavored M&M’s
  • 1 cup pumpkin baking chips

How to Make Pumpkin Spice Latte Popcorn

Preheat the oven to 300°F and line a large baking sheet with parchment paper.

Make the Pumpkin Spice Popcorn

Place 3 cups of popped popcorn into a large mixing bowl.

In a medium saucepan over medium-low heat, combine the butter, sugar, dark corn syrup, water, vanilla extract, salt, and pumpkin pie spice.

Cook, stirring frequently, until the butter has melted and the sugar has completely dissolved.

Slowly pour the warm pumpkin spice mixture over the popcorn.

Gently toss the popcorn with a large spoon until it is evenly coated.

Spread the coated popcorn in an even layer on the prepared baking sheet.

Bake uncovered for 10–15 minutes, stirring approximately every 4 minutes so the popcorn bakes evenly.

Remove from the oven and allow it to cool.

Make the Coffee Popcorn

Place the remaining 3 cups of popped popcorn in a clean large mixing bowl.

In a saucepan over medium-low heat, combine the butter, strong brewed coffee, sugar, dark corn syrup, and finely ground coffee.

Cook and stir until the butter has melted and the sugar has dissolved.

Slowly pour the coffee mixture over the popcorn and gently toss until evenly coated.

Spread the coffee popcorn onto a parchment-lined baking sheet.

Bake at 300°F for 10–15 minutes, stirring approximately every 4 minutes.

Remove from the oven and allow the popcorn to cool completely.

Put It All Together

Let both batches of popcorn cool for at least 30 minutes.

Once completely cooled, place the pumpkin spice popcorn and coffee popcorn together in a large serving bowl.

Add the pumpkin pie M&M’s and pumpkin baking chips.

Gently toss everything together until the candies are distributed throughout the popcorn.

Can’t Find Pumpkin Pie M&M’s?

Don’t let that stop you from making the recipe. You can substitute regular M&M’s, fall-colored M&M’s, Reese’s Pieces, or another chocolate candy.

The same goes for pumpkin baking chips. If you can’t find them, try white chocolate chips, cinnamon chips, butterscotch chips, or simply leave them out.
