Here’s a quick, fun and simple recipe that is perfect for Valentine’s Day or for wishing in warmer weather. There are still a few months before the strawberries start growing here in Minnesota, so, until then we’ll be enjoying these strawberry cake mix cookies.
To make these strawberry cake mix cookies you will need the following –
15oz Box Strawberry Cake Mix
2 Eggs
1/2 Cup Melted Butter
1 Cup Powdered Sugar
This simple recipe moves fairly quickly so I like to have all my ingredients measured out and ready to go. You can also use a hand mixer or stand mixer, whichever you prefer.
Preheat the over to 350 and move the rack to the center position.
First, pour the strawberry cake mix into a large mixing bowl. Use a fork to break up any large lumps.
Next, add the eggs and melted butter.
Mix well and make sure all lumps are broken up.
Refrigerate for one hour.
Take a tablespoon or small cookie scoop and roll the dough into balls.
Take each ball and roll the dough in the powdered sugar.
Place the sugar powder-covered dough on a parchment paper on a baking sheet.
Bake for 10 minutes or until cookies are set and lightly browned at 350 degrees.
Serve & enjoy!!!
