Bacon Cheeseburger Ring

It is almost time for all the high school and college tournaments to start!  Now is the time to start thinking about what your gang will be snacking on while they watch every game. This bacon cheeseburger ring is great for feeding a hungry crowd. You can make most of it ahead of time then pop it in the oven when the games start.  We also like this bacon cheeseburger ring because it can be customized. Don’t like bacon? Or do you want a lot of bacon? That’s ok, just put what you would like in the ring. But I will warn you, do not overdo it on the cheese. It’ll leak out and burn. A little cheese goes a long way in this recipe.

Bacon Cheeseburger RingTo make a Bacon Cheeseburger Ring you will need the following –

2 containers Crescent Rolls
3/4 C Ketchup
3/4 C Mayonaise
3 TBS Dill Pickle Relish
1/3 C Yellow Mustard
6-12 Strips of Bacon
1/2 Red Onion, diced
1 lb Ground Beef
Kosher Salt
Black Pepper
5 slices American Cheese, halved
Non-Stick Spray – only if not using a pizza stone

First, make sure you have your items prepped. If you cannot find dill relish you can get dill pickle slices and dice them. Dice your red onion. And cook your bacon.

You have a few options for cooking bacon. You can bake it in the oven or your can pan fry it on the stove. You just want to make sure it’s crispy.

I prefer to pan-fry my bacon and then use a little of the grease from the bacon to fry the onion. It gives it a little more flavor.  If you want to make it exactly like I do you will need to do the following.

In a large skillet, pan fry your bacon over medium-high heat. You will want to cook each side for about 3-4 minutes until they are crispy but not burnt. Once they are cooked place them on paper towels to absorb the excess grease. Pour all the grease except about a tablespoon out of the pan.

Then add the onion to the pan and cook it for about 3 minutes. You will want to stir the onion while you are cooking it so it does not stick to the pan.

Once the onion is cooked add in the ground beef, salt, and pepper. You will want to stir this while it cooks, breaking it up while it’s browning. The goal is to have bite-size pieces once it’s cooked. Be sure to cook the beef all the way through.  It took me about 8 minutes to cook beef.

Remove the ground beef mixture from the stove. Then place the mixture into a large bowl. Try not to bring any grease with it. You can drain the grease and then pour the beef mixture in a bowl or you can scoop the beef mixture into a bowl.  Let this cool for about 15 minutes or so.

While the beef mixture is cooling, it’s time to make the sauce. In a medium bowl combine the ketchup, mayonnaise, relish, and mustard. Mix until it is well combined.

Once the beef mixture is cool you are going to add in 3/4 C of the sauce and still until all the meat is coated.

I’m using my circle stone to bake this ring on. If you do not have a stone, use a baking sheet. Just be sure to spray it with non-stick spray.

To create the ring you are going to either lay the crescent rolls out so it looks like a sun or place a ramekin upside on the baking sheet/stone and place the crescent rolls around them. Either way is fine.

Once you have created your base of crescent rolls it’s time to scoop in the beef mixture. Spread the beef mixture out on the ring keeping it to the inside all the way around.

Take a slice of cheese, cut it in half, and place it on top of the beef mixture. Repeat with the remaining pieces of cheese until there is cheese going around the ring.

For the bacon, you can either cut it up or place the slices on top of the cheese. It’s a personal preference.

Now, take the edge of the crescent roll, pull it over the meat mixture, and tuck it under. Repeat this until you have all the edges tucked. There will be some exposed areas and that’s ok.

Bake at 375F on the center rake for about 25 minutes.

Remove from oven and cool for 10-25 minutes.
