During the week we do not get home until a little after 6 pm. I have to get dinner on the table as quickly as possible before Peyton eats everything that is not nailed down. (this kid eats!) Stir Fry is one of my go-to dishes because it’s quick. easy and full of protein and vegetables. Combine that with Ling Ling Bibimbap Beef Fried Rice and I have a complete meal in under 20 minutes.
You can prep this meal the night before so all you have to do is cook when you get home. To recreate this dish, you’ll need the following –
1 Box Ling Ling Bibimbap Beef Fried Rice
1 Red Pepper
1 Green Pepper
1 can (drained) water chestnuts
1 lb Beef
Catalina Dressing
Coconut Oil
I picked up everything I needed, including the Ling Ling Yakiniku Beef Fried Rice at my local Walmart. Right now you can get a $2 off coupon to use on your purchase at your local retailer! Coupon expires on January 31, 2018.
The prep takes longer than the actual cooking. Slice the beef and peppers into strips and set aside. You can do this the night before or in the morning if you have time. It’ll save you about 10 minutes in the evening.
First, heat your Wok up with about a teaspoon of coconut oil. Once the oil is hot, add in your peppers and water chestnut. Let those cook for a few minutes, about 3-5 minutes.
When the peppers are bright, add in the beef and drizzle the Catalina dressing over the meat and vegetables. This is your stirfry sauce without the msg. You can use a lite Catalina dressing as well to save on calories. Cook for another 3-5 minutes until you beef is cooked.
While you are cooking the beef be sure to place the Bibimbap Beef Fried Rice in the microwave and cook per the directions on the box. I cooked both bags inside the box and I believe it took me 7 minutes.
Once everything is cooked, dish it up and enjoy!

I chose to go with Bibimbap Beef Fried Rice because it said there was a little spice and I wanted to kick my dish up a notch. I thought the spice level was very mild and perfect for my stir fry dish. And it was mild enough that even Peyton enjoyed it.
This is one of my go-to dishes during the week because I can meal prep it ahead of time. That saves me time and helps me get dinner on the table fast when I get home. You can also serve the Ling Ling Bibimbap Beef as the main dish and pair it with an egg roll. Just depends on how pressed for time you are.
