Campfire Steak and Potato Foil Packets

Summer is in full swing and the hot days and nights are here too. When it’s this hot and humid I do not like using the oven. I try to cook as much outside on the grill as possible. Tonight, we are making steak and potato foil packets. These are great for nights you don’t want to turn the oven on. Plus you can make these while camping too. Just place the foil packets on the edge of the campfire or over the grill.

Steak and Potato Foil PacketsTo make these steak and potato foil packets you will need the following –

2 1/2 lbs Top Sirloin Steak, cut into 2 to 2 1/2 inch cubes with the fat trimmed off
1 lb Baby Yellow Potatoes, cut into 1-inch cubes
3 TBSP Olive Oil
1 TBSP Minced Garlic
1 Tsp Onion Powder
1 Tsp Dried Oregano
1 Tsp Dried Parsley
1 Tsp Dried Thyme
Salt
Pepper
Tin Foil

First, in a large bowl, combine the steak, potatoes, olive oil, garlic, onion powder, oregano, parsley, thyme, salt and pepper.

Combine the ingredients until the potatoes and steak are evenly coated.

Steak and Potato Foil PacketsTear the tin foil into 4 12×12 sheets.

Divide the mixture evenly between the 4 sheets of tinfoil.

Close the tin foil packets.

You can either grill these on medium heat, roughly 425, for 10 minutes on each side. Bake in the oven at 425 for 20-25 minutes. Open the packets and broil for a few minutes to get the charred look. Or if you are camping you can place it on the outside ring of the fire for 20-25 minutes.

Steak and Potato Foil PacketsTip – Larger chunks of meat will take longer to cook so this will give you pink or rare meat. Be sure to cut the potatoes in 1-inch cubes otherwise it’ll take too long for them to bake.
