Celebrate Summer with FatBoy

Doesn’t it feel like summer is just flying by? It seems like just yesterday was the last day of school. It feels like we should still be at the beginning of summer. But were not. School starts in 4 weeks. FOUR WEEKS! Did you get that? In 4 weeks, Peyton will be back in school. Summer will have come to an end. So I’m going to hold on to summer for as long as I can. And for us, that means enjoying as many strawberries as possible. Aren’t they the poster child for summer? Strawberries make everything better. My other favorite summer treat is ice cream! Who doesn’t love some tasty, delicious, creamy ice cream? FatBoy makes these delectable, creamy, dreamy ice cream sandwiches that make the perfect chocolate covered strawberry sundae.

The rest is fairly simple. I took that HUGE FatBoy ice cream sandwich and I cut it into 9 pieces. Yes, you read that right, I got 9 big bite size pieces out of that ONE sandwich.  I cut up about 4-5 strawberries and then I began alternating them in the sundae bowl. I made a little mound on top of the FatBoy then I topped it with a little whipped dairy topping and a juicy strawberry! And instant crowd pleaser.

Why do I call this a chocolate covered strawberry sundae? Well, FatBoy has the best sandwich cookies, they are somewhat soft and scrumptious and have a rich chocolate taste. Pair that with a fresh berry and it’s like a chocolate strawberry explosion in your mouth.
