Complete Chicken Dinner in Your Ninja Foodi

I like to provide Peyton with a homecooked dinner whenever possible. But during the week it can be difficult. Between working full time, after school activities, homework and housework finding time to cook a complete meal by scratch and have it on the table at a reasonable time is challenging. And I also don’t want to spend an hour every night doing dishes. I use our Ninja Foodi as much as possible because it’s one dish to clean, it cooks quickly and helps me get tasty meals on the table quickly. This chicken dinner in the Ninja Foodi is a family favorite.

Chicken Dinner in Ninja FoodiToday, I’m sharing with you how to make my complete chicken dinner in the Ninja Foodi. You will have delicious mashed potatoes, steamed carrots, and tasty chicken. It’s like a Sunday dinner any night of the week!

To make my complete chicken dinner you will need the following –


5-6 Chicken Thighs, skin optional
Garlic
Oregano
1 Onion, yellow medium
1/2 stick butter, unsalted
5-6 Potatoes, large
Salt
Pepper
3 tbsp Extra Virgin Olive Oil
1/2 C Chicken Stock
1 Bag Carrots
2 Lemons
4 tbsp Milk

Chicken Dinner in Ninja FoodiYou do have a little prep work to do before you start cooking. You can do this prep work the night before if you want.

First, peel and dice the onions. Mince your garlic. Rinse your carrots. Then set this all aside.

Next, turn the Ninja Foodi on the Saute setting, high. Add the vegetable oil and let it heat up.

You can use chicken thighs with the skin but if you don’t have any or prefer skinless chicken you can do it without. I did not have any chicken thighs with skin on them so I did it without. Salt and Pepper your chicken thighs.

Place the chicken thighs skin down in the hot olive oil, you want to sear the skin. Then flip over and repeat.

Next, add 1/2 sliced lemon and onions and sautee for 2 minutes.

Put the chicken stock, juice from 1 lemon and carrots in the Ninja Foodi.

All the steam rack and place the chopped up potatoes on the rack.

Place the pressure cooking lid on the Ninja Foodi and switch to the pressure cooking setting, high for 15 minutes.

When the 15 minutes are up, do a quick release.

Remove the potatoes and set aside in a bowl.

Remove the carrots and place in another bowl.

Remove the chicken and set aside.

Add the potatoes back into the Ninja Foodi. Turn the Ninja Foodi back on saute, high.

Let the sauce thicken then mash the potatoes right in the pot. You can do this by hand or with a hand mixer.

Add the butter and milk to taste.

If you have chicken thighs with skin on and want a nice crispy skin you will want to do the next step.

Remove the mashed potatoes from the Ninja Foodi.

Place the air fryer basket in the Ninja Foodi and place the chicken thighs in the basket. Pour about a tablespoon of oil in the bottom of the Ninja Foodi.

Chicken Dinner in Ninja FoodiSet the Ninja Foodi to air fry for about 5 minutes and let the chicken skin get crisp. You may need to do this for less or more time depending on how big your chicken thighs are. This is only if you have skin on your chicken. If there is no skin on your chicken skip this step.

And now you have a complete chicken dinner!

This dinner is a complete hit with my kid, she gobbles it up every time.
