Peyton loves the carnitas at Chipolte. She always orders a carnitas burrito every time we go. I’ll admit I am partial to their steak but I wanted to make carnitas at home for Peyton so I gave it a shot. Plus, making it in a big batch is perfect for family get-togethers. I actually made this exact recipe for my grandmother’s 90th birthday party and it was a huge hit. While it tastes just like Chipotle’s carnitas it is a little juicier or moist which was a huge hit. Plus it makes reheating this dish a snap. I will warn you, this is an all-day slow-cooker recipe. Depending on the size of your pork shoulder it could take 10 hours on low or more. So be sure to give yourself some leeway.
To make this Copycat Chipotle Carnitas recipe you will need the following –
4 lb Pork Shoulder (if you get a bigger one you will need more cooking time)
1 tsp Salt
1 tsp Garlic Powder
1 tsp Cumin
1/2 tsp Dried Oregano
1/2 tsp Ground Coriander
1/4 tsp Ground Cinnamon
2 Bay Leaves
2 C Chicken Broth
In a small bowl combine the salt, garlic powder, cumin, oregano, coriander, and cinnamon. Rub this into the pork shoulder. Be sure to rub the entire pork shoulder.
Place the bay leaves on the bottom of the crockpot and set the pork shoulder on top of them.
Carefully pour the 2 cups of chicken broth into the crockpot. Try to not wash off the seasoning on the pork shoulder.
Cover and set on low for 10+ hours.
If you are in a time crunch you can cook on high for about half the time. Try to not open the lid and check the meat until at least 4 hours when on high and about 9 hours on low. Every time you open the crockpot you are delaying the cooking process because the heat has to build back up.
