Crockpot Copycat Chipotle Barbacoa

If you are a Chipotle fan you will want to try this recipe. Peyton cannot get enough of Chipotle and would probably eat there twice a day if I would let her. So tonight, I am making this copycat Chipotle Barbacoa in the crockpot.

Crockpot Copycat Chipotle BarbacoaTo make a batch of Crockpot Copycat Chipotle Barbacoa you will need the following –

3 lb Beef Chuck Roast
2 tbsp Olive Oil
1 tsp Salt
1/2 tsp Dried Leaf Oregano
1/2 tsp Cumin
1/4 tsp Cloves, ground
2 Bay Leaves
2 cloves Garlic, minced
2 Chipotle peppers minced
1 tbsp Adobo Sauce (this is the sauce the peppers are in)
1 C Onion, diced
1/2 C  Water

In a large skillet heat the olive oil. Once the olive oil is heated sear the roast on all sides.

Place the roast in the crockpot.

In a small bowl mix together the salt, oregano, cumin, and cloves. Sprinkle over the roast.

Next, toss in the bay leaves.

Then top the roast with garlic, Chipotle peppers, and adobo sauce.

Pour the water into the crockpot without washing the seasoning off the roast.

Place the cover on and cook on low for 8-10 hours.

Once the cooking time is over, remove the lid and take out the bay leaves.

Shred the beef with either 2 forks or meat claws.

Serve with your favorite toppings and enjoy!

Ingredients
