Crockpot White Chicken Poblano Chili

We are halfway through Crocktober! I hope you are all enjoying the variety of crockpot recipes I have been sharing this month. Today we are sharing a great chili recipe. it’s a lighter broth-type chili. But it has been a hit with everyone that has tried my Crockpot White Chicken Poblano Chili.

Crockpot White Chicken Poblano ChiliTo make a batch of Crockpot White Chicken Poblano Chili you will need the following –

21 oz Cream of Chicken Soup
3 C Water
1/2 C White Onion, diced
1 Poblano Pepper, diced
1/2 tsp Oregano
1/4 tsp Salt
1/4 tsp Pepper
1/4 tsp Garlic Powder
1/8 tsp Cumin
30 oz Cannellini Beans, drained and rinsed
2 lb Chicken Breasts or Thighs

First, pour the cream of chicken and water into the crockpot. Use a whisk to get out all the lumps.

Next, stir in the diced onion, poblano peppers, oregano, salt, pepper, garlic, and cumin.

Take your drained and rinsed Cannellini beans and gently stir them into the crockpot.

Place the chicken into the pot.

Place the cover on and set it to low for 8 hours.

Once the cooking time is up, take 2 forks and shred the chicken. You can do this either in the crockpot or remove the chicken from the crockpot, shred and then place it back in the crockpot.

Crockpot White Chicken Poblano ChiliNow you are ready to enjoy! Serve with your favorite toppings like shredded Monterey jack cheese, pepper jack cheese, or sliced table onions.

This crockpot white chiken poblano chili is perfect for fall nights.
