Even though the weather is warming up I still want lattes. Just now, I want them cold! Plus all the wonderful berries are coming in season too. So today, we are going to make Blueberry Shortcake Cold Brew Lattes! I will admit there is a little prep work needed for this recipe. But once your prep work is done, you can be sipping on Blueberry Shortcake Cold Bew Lattes all week long in a matter of seconds.
This does require you to cold brew your coffee ahead of time. And it requires you to make a simple syrup. Those are the 2 prep steps you need to do. But, both of these will last in the fridge for a week so you can make them ahead of time and enjoy as many lattes as you would like.

So to create this decadent latte you will need the following –
2 Cups of fresh or defrosted frozen blueberries
1/2 C Water
1/2 C Sugar
7 Blueberry Shortcake K Cups
56 ounces of water
Ice
Milk
Whipped Cream
Fresh Blueberries
First, we are going to start by making the cold brew. To make a traditional cold brew, cut open 7 Blueberry Shortcake K Cups and pour them into a pitcher. Then add 56 ounces of water and gently stir. Cover and let steep in the refrigerator overnight or for about 14 hours. If you need to take a shortcut because you don’t have overnight brew the kcups on the smallest setting and then chill.
Once your coffee has steeped overnight, now it’s time to remove the grounds. This can be a smidge messy so be prepared. You’ll need a fine mesh strainer, coffee filter, and another pitcher. Place the filter into the strainer and position it over the empty pitcher. Now, pour the contents of the full pitcher through the strainer and filter. Remember, pour small amounts at a time. The coffee needs to work its way through the filter and strainer into the empty pitcher.
Put the ground free coffee back in the refrigerator until we are ready to make the lattes. Be sure to cover it! It will last about a week in the fridge.
The next step that is time-consuming is making the simple syrup. You’ll need the blueberries, 1/2 c of water, 1/2 c sugar, a blender, fine mesh strainer, and saucepan.
First, take the blueberries and water and pour them into the blender. Blend until you have a puree.
Pour the blueberry puree through the fine mesh strainer into a saucepan and add the sugar.
Heat on medium, bringing it to a simmer, for about 5 minutes. All the sugar should be dissolved. If not, simmer it a little longer. Remember to stir this mixture frequently or you could burn your syrup.
Let the syrup cool, then pour into an airtight container and refrigerate until you are ready to use. Will last 1-2 weeks in the fridge depending on how tight your air seal is.
Now it’s time to make the lattes!!!
Take out as many glasses as you need for drinks. I will say, this is not a make-ahead beverage. You’ll want to mix it together as needed.
Fill each glass with ice.
Pour the cold brew over the ice leaving a little room for your blueberry syrup and milk.
Next, add 2-3 tablespoons of the blueberry syrup. This is really up to tastes. If you like sweet coffee go for 3 tablespoons. You can always add more but you cannot add less.
Next, pour in some milk. Now stir it all to combine it.
Top each glass with a generous amount of whip cream.
Drizzle the blueberry syrup over the top and garnish with a few fresh blueberries.
I highly suggest adding a straw.
Lastly, enjoy! It’s a fun, impressive drink that is great for entertaining. Plus, you can make this in the morning at home and skip the coffee shop! Just be sure you have enough cold brew and blueberry syrup made ahead of time.
