Double Chocolate Peppermint Cookies

I love chocolate and candy canes together so I thought a double chocolate chip cookie with a little bit of crushed candy canes would be a total hit. And it is! It’s the perfect balance of chocolate with a touch of peppermint. These double chocolate peppermint cookies go perfectly with a glass of ice-cold milk.

Double Chocolate Peppermint CookiesTo make a batch of these double chocolate peppermint cookies you will need the following –

1 1/4 C Flour
1/3 C Cocoa Powder
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Kosher Salt
1/2 C Butter, room temp
3/4 C Sugar
1 large Egg
1/4 tsp Peppermint Extract
1 C Semi-Sweet Chocolate Chips
1 C Crushed Candy Canes

Once you’ve laid out all your ingredients, set your oven rack in the center position, and preheat your oven to 350F.

In a medium bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Use a whisk to make sure it is well combined and to break up any clumps.

In another bowl, with a hand or stand mixer, cream together the butter and sugar. You want to beat it for 2-3 minutes until it’s light and fluffy.

Add in the egg and peppermint extract. Mix just enough to combine it with the butter-sugar mixture.

Slowly add in the flour to the mixture.  You can use the mixer or you can stir in by hand.

Double Chocolate Peppermint CookiesOnce the flour is all mixed in it’s time to add in the chocolate chips and crushed candy canes. you want to mix these in by hand.

Take a medium cookie scoop and place scoops of cookie dough on a baking sheet lined with parchment paper.

Bake on the center rack in the oven for 8-11 minutes. You want crispy edges but a soft center.

Remove from oven and let cool on the baking sheet for a few minutes then move it to a cooling rack to finish cooling.

Enjoy with an ice-cold glass of milk or a warm cup of cocoa.
