It’s apple season! I love fall. When the air becomes crisp, the leaves start to change colors and fall off the trees and all the apple orchards are open for apple picking! By the time September rolls around, I am craving that first glass of fresh-pressed apple cider. I also love fudge. So I decided to try my hand and making a caramel apple fudge.
This caramel apple fudge is extremely easy to make. It has a rich, smooth texture and tastes just like a caramel apple.
To make a batch of caramel apple fudge at home you will need the following –
1/4 C Butter, unsalted
3 C Mini Marshmallows
1/2 C Sugar
1/2 C Heavy Cream
3 packets of Apple Cider Drink Mix
3 C White Chocolate Chips
1/2 C Caramel Bits
1 1/2 tbsp Heavy Cream
The first thing you want to do is line an 8×8 or 9×9 pan with tinfoil. You’ll want to leave a little hanging over the edge so you can pull the fudge out the pan once it has cooled.
Next, in a large saucepan, melt the butter, marshmallows, sugar, heavy cream, and apple cider over medium heat. You’ll want to stir this occasionally to help break up the marshmallows, it’ll take about 8-10 minutes.
While the marshmallow mixture is on the stove it’s time to melt the caramels! In a microwave-safe bowl combine the caramel bit and heavy cream. Microwave at 50% power in 45-second intervals. Be sure to stir in between until the caramels are melted.
Once the marshmallow mixture is melted, remove it from the heat and quickly stir in the chocolate chips. This is going to take some muscles and a strong spoon or spatula. Keep folding and stirring until all the chocolate is melted.
Then pour the mixture into the prepared pan. Be sure to smooth it evenly throughout the pan.
Next, drizzle the melted caramel on top of the fudge. Then take a knife and pull it through the fudge to create swirls.
Place in the fridge and let it chill for about 3 hours. Then remove from the fridge, pull the fudge out of the pan, and slice into small squares.
This keeps best in the fridge. Once you’ve sliced your fudge, store in an airtight container. It’ll keep for a few weeks if properly stored.
