Pie Crust

  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon almond extract
  • 1 tablespoon unsalted butter, cut into small cubes

Directions

  1. Add the cherries, sugar, cornstarch, lemon juice, and butter to a medium saucepan.
  2. Cook over low heat, stirring to combine the ingredients.
  3. Continue cooking until the filling begins to thicken.
  4. Bring the mixture to a gentle boil.
  5. Remove from the heat.
  6. Stir in the almond extract.
  7. Allow the filling to cool while preparing the crumb topping.

Crumb Topping

Ingredients

  • ⅔ cup all-purpose flour
  • ⅔ cup sugar
  • 6 tablespoons unsalted butter, cut into small cubes

Directions

  1. Combine the flour, sugar, and butter in a mixing bowl.

Ingredients

  • 1 Pie Crust - premade

Cherry Filling Ingredients

  • 3 C Fresh Cherries - pitted
  • 1/2 C Sugar
  • 2 TBSP Cornstarch
  • 1/2 tsp Almond Extract
  • 1 TBSP Lemon Juice
  • 1 TBSP Unsalted Sweet Cream Butter, cubed

Crumb Topping Ingredients

  • 2/3 C All Purpose Flour
  • 2/3 C Sugar
  • 6 TBSP Butter, cubed

Instructions

Crumb Topping Directions

  • Add the flour, sugar, and butter in a bowl. Using your fingers or a fork combine the ingredients together. Continue working until the crumbs start to clump together. Move to the refrigerator until it needs to be added.

Filling Directions

  • Add the fresh cherries, sugar, cornstarch, lemon juice, and the sweet cream butter in a medium size pot. Cook on low heat. Stir to combine. Continue to cook on low heat until the mixture begins to thicken. Bring it to a boil. Remove the pot from the stove. Add the almond extract, stirring to blend. Set the pot aside allowing it to cool.
  • Preheat the oven to 350 degrees. Scoop the pie filling into the crust. Using an offset spatula spread the filling evenly in the crust. Sprinkle the crumb topping evenly on top of the pie. Bake at 350 degrees for 40-45 minutes. The filling will be bubbling and the topping should be a light brown. If the edges of the crust begin to burn, cover them with foil.
