It’s no secret that I have a few favorites on Nutrisystem that I order a ton of. Just ask my counselor! She is always ordering me the same dinners. But my absolute FAVORITE dinner is the Mushroom Stuffed Chicken Breast. I could eat this every single day and never get bored.
One of the reasons I love this dinner is it’s easy to make. I just pop it in the oven and walk away. It’s so simple. It does take a little while to cook, about 30 minutes, but that’s ok because I’m cooking dinner for Peyton while my dinner cooks.
I also love this dish because I can change it up by adding different vegetables. And every vegetable goes well with it! It’s a great way to get my veggies in and enjoy my dinner at the same time for 400 calories or less, depending on the choice of vegetable.
Lately, my vegetable of choice has been asparagus. It cooks in the oven at the same time as the chicken so it takes barely any effort of time to make. I take some tinfoil, add the asparagus, spray with a little extra virgin olive oil, season with Mrs. Dash and make a little foil packet. Then I place it on the baking sheet next to my chicken and let it bake.
Another vegetable I like to enjoy in the fall is Brussel Sprouts. These are a smidge more time consuming than asparagus but worth the extra effort. Just wash the sprouts, cut them in half or quarters depending on how large they are, sprinkle with olive oil, salt, and Mrs. Dash then place on the baking sheet with the chicken and bake. Another perfect vegetable!
I tend to roast my vegetables rather than steaming them because I think it’s easier and taste better. Plus, roasting them causes less nutrient loss than other cooking methods.
