Frozen 2 Popcorn Balls

And our third Frozen 2 inspired recipe of the week is Frozen 2 Popcorn balls! These were made in the Instant Pot but you can also make them with a good old fashioned popcorn maker and a saucepan on the stove.  Just do not try to use microwave popcorn to make these, it won’t work that well. You want fresh, unbuttered, plain popcorn.

To make these Frozen 2 Popcorn Balls you’ll need the following –

1 TBSP unsalted butter
1/4 C light corn syrup
3 TBSP vegetable oil
1 C popcorn kennels (ck the date on the container of kennels to ensure that the kennels are fresh)
2 1/2 C mini marshmallows
1 can blue food spray
1 container blue sugar
Cooking spray for hands
Instant Pot
Large bowl/ pan
Parchment Paper


This recipe does use the instant pot but you can also do this with a saucepan on the stove.  To start you are going to set the Instant Pot to SAUTE.

Add the oil, butter, and corn syrup.

Carefully stir.

Set aside to let the Instant Pot to get to the HOT setting.

If you are using a saucepan, set your burning to medium-high, add the oil, butter and corn syrup. Be sure to stir it together.

When the mixture is hot, pour the kernels in the pot. (Mixture will be very hot)

Stir gently to make sure all of the kernels are coated.

Add a glass lid on the Instant Pot.

Listen for the popping of the popcorn.

Once you hear a break in the popping. (a few seconds between kernels popping)

Press CANCEL.

Carefully pour out the kernels in either a large bowl or a pan.

Remove any of the unpopped kernels.

Re-add the popped popcorn to the pot.

Add the mini marshmallows.

Stir the mini marshmallows and popcorn until the mixture is mixed.

Place the lid back on the pot.

Allow the marshmallows to heat and melt.

Check on the popcorn mixture to make sure that it is cooled enough to touch.

Spray your hands with the nonstick baking spray.

Reach in the pot and grab enough popcorn mixture to form a 3-inch ball.

Put popcorn balls on parchment paper.

(Continue to repeat these steps until all of the popcorn balls have been made. )

Once the popcorn balls have cooled.

Spray the light blue food spray on the balls.

Turn the popcorn ball around to coat the entire ball.

Immediately sprinkle the blue sugar on the popcorn balls.

Set aside.

Store leftovers in an airtight container.

These are sure to be hit with the kids.
