One of the ways to staying on track with any weight loss plan in planning your meals out. The secret to my success has been low point value dinners, zero point breakfast and then I can splurge at lunch. There are days I’m not even using half my points! So today, I’m going to teach you how to make this absolutely delicious spicy rub for these pork chops plus your side dish – grilled snap peas. I like to call it Grilled Spicy Pork Chops with Parmesan Snap Peas and it’s on all the Weight Watchers plan! All this is done on the grill so there is zero clean up.
You will need the following –
1 1/2 Tbsp Chili Powder
1 Tbsp Brown Sugar
2 tsp Ground Cumin
1 tsp Minced Garlic
2 Tbsp Worcestershire Sauce
3-4 1/2 inch thick Pork Chops
Snap Peas
Extra Virgin Olive Oil
Salt
Parmesan Cheese
Tinfoil
This recipe goes fairly quickly so you’ll want to start about a half-hour before you want to eat.
Start your grill while you make the rub so it’s nice and hot.
But first, we’re going to start those snap peas. They take a little longer to cook than the pork chops. Take a large piece of tin foil and lay it out flat. Pour the snap peas out and sprinkle with extra virgin olive oil and a little salt. Close the tin foil by folding the sides in and securing them. Place them on the grill. I did about 8 minutes per side.
Once the snap peas are started its time to make the rub!
In a shallow bowl or pan, combine the chili powder, sugar, cumin, garlic and Worcestershire sauce. It’ll turn into a thick paste.
Take each pork chop and rub it through the mixture getting a nice even coating on all side.
Grill for about 4 minutes on each side over medium-low heat.
Once your pork chops and snap peas are done take them off the grill and get ready to plate your dinner.
The snap peas are zero points so you can go crazy on those. Just be mindful the parmesan cheese on top and the olive oil we used to cook them does have point values.
The pork chop is 5 points for a 5-ounce pre-cook weight chop.
To serve, plate your pork chop and desired amount of snap peas. Sprinkle parmesan cheese over the snap peas, this is optional. The plate above was 7 points and very filling. It was a delicious dinner that was satisfying, plus the whole family loved it!
