The kids are heading back to school and summer is coming to an end but I’m going to hold on to it as long as I can. This coming weekend there will be celebrations and BBQs. It can be a hard time for those of us that are on a weight loss journey or trying to eat healthily. But I have a little recipe up my sleeve! Here’s an option for a low cal strawberry shortcake using the Nutrisystem Pound Cake.
I know I get bored and frustrated with eating the same things over and over again. And when I get frustrated I start to stray. So I’ve been thinking of ways I can still enjoy some classic recipes while not derailing all the hard work I’ve done. One of my favorite summer treats is strawberry shortcake. But traditional pound cake can be full of calories. Thankfully, Nutrisystem makes a pound cake! And it is so yummy!
What you’ll need for this recipe is the following –
1 – Nutrisystem Golden Pound Cake
1/4 cups of fresh cut strawberries
just a few dollops of Cool Whip or Reddi Whip
I also like to make my food look pretty so I bought these mini dessert cups at Hy-Vee when I was grocery shopping the other day. Aren’t they just adorable??
This is a personal preference so you can do whatever you want but I like to cut up chunks of the pound cake and then toss them in with the fresh berries in the cup. Add a little Reddi Whip and top it off with a whole berry. It’s the perfect little treat! Now, this does count as 2 of your extras for the day. And I only indulge in this treat when I’ve been doing a lot of exercise or have burned a large amount of calories for the day.
I love strawberry shortcake and this is my lighter version of it. You can even make this for all your guest. Trust me, they won’t even notice a difference!
