I would love to be the mom that has wonderful homemade meal on the table every night for my daughter. But the reality is I am a single mom and we get home at 6 pm every night. Now I could let her survive on frozen pizza or fast food but I want her to learn how to cook and to eat somewhat healthy food. Here is a recipe I picked up (I have no clue where) and I have altered to make it a little healthier. Kids love it!
This is my version of Chicken Parmesan for Kids. Here’s a list of ingredients you will need:
1 bag Chicken Tenders (I prefer the Perdue Simply Smart lightly breaded chicken tenders or Gluten Free chicken tenders)
1 16-24 ounce Spaghetti Sauce
Italian Season blend
Shredded Parmesan Cheese
Sliced Mozzarella or Provolone
First step is take a 13×9 glass pan and spray Pam on the bottom, this will prevent your chicken from sticking. Layer the bottom with chicken tenders.
Next sprinkle a generous amount of shredded Parmesan cheese over the tenders.
Top with sauce and sprinkle with seasoning.
Place sliced cheese to cover to the chicken and sauce
Bake at 350 for 30 minutes. May need a few extra minutes to help turn the cheese golden brown. Remove from oven and let sit for about 5 minutes.
Plate up and enjoy! I always serve with some cheesy bread also.
