These cute Leprechaun Kisses are just what you need to get you in the St. Patrick’s Day mood. Who doesn’t love St. Patrick’s Day? If you don’t, then you have not been celebrating it right! Growing up I remember heading to downtown St. Paul with my grandparents and lining up to watch the St. Patrick’s Day parade. We always stood in the skyway because let’s be real, I live in Minnesota and March can be a very chilly month. So standing in a skyway and looking down at the parade was a wonderful option. The biggest drawback is you miss the candy and treats they give out on the parade route. And for a 5-year old that candy is a big deal.
Another fun thing about being a parent is getting to celebrate all the holidays, no matter how small or big they are with your littles. And in this house, when we celebrate anything, food is involved. Today, we are making Leprechaun Kisses to welcome the Leprechaun’s and get ready for St. Patrick Day.
You will need the following to create this recipe at home –
3 Egg Whites
1/2 cup Sugar
2 teaspoons Vanilla
Green Food Coloring
2 teaspoons Citric Acid
This is a fun and simple recipe that even the kids can help with!
First step –
In the bowl of a kitchen add mixture add the egg whites. Beat on medium speed until they start to bubble. Add in citric acid and mix on medium speed till egg whites start to stiffen.
This is the hardest part in the whole recipe. But it’s also fun to watch the eggs bubble and cool for the kids to see them change from egg whites to a white fluffy texture.
Second step –
Slowly tablespoon by tablespoon add in the sugar. Turn to a high speed and let beat until it’s thick and you have stiff white peaks. Make sure to take the mixture and rub between two fingers. If you feel sugar granules then beat more until you don’t feel the sugar.
And the last step –
Preheat oven to 200 degrees F. In a piping bag add with a skewer a tad of food coloring. Place meringue mixture into a piping bag. Pipe meringues onto a baking sheet lined with parchment paper. Place in oven with oven door cracked. Bake for 1 hour or until the meringues lift off the parchment paper easily.
Remember to let these cool before enjoying.
