Mini Banana Bread

The kids are back in school! Well, in some shape or form the kids are back in school. And while it doesn’t look like a typical school year we still need to have snacks around the house to send with them or for them to munch on when they are home. I’m taking this classic banana bread recipe and turning it into mini banana bread. They are the perfect size to send with the kids for a snack, grab for an on the go breakfast or to have around the house for when they get home and want something to munch on.

To make a batch of mini banana bread you will need the following –

2 C Flour
1 tsp Baking Soda
1/2 tsp Salt
1/2 tsp Cinnamon
1/2 C Butter
1/2 C Brown Sugar
1/2 C Sugar
2 Eggs
1 tsp Vanilla Extract
1 1/3 C Mashed Banana
Mini Loaf Pan

If you rather make one large loaf you can do that too, just bake for 50 minutes.

First, preheat your oven to 350F and prep your pan. You can spray it with nonstick spray or grease and flour it.

In a small bowl, combine the flour, baking soda, salt, and cinnamon. Be sure to give it a quick stir so it’s all combined.

In a large bowl, combine the brown sugar, sugar, and butter. Beat with a hand or stand mixer until they are fluffy.

Next, add the eggs and vanilla and mix until well combined.

Fold in your mashed bananas.

Then add in the flour mixture and mix until completely combined.

Fill each mini loaf well about 2/3 full.

Bake for 18-24 minutes on the center rack.

Let the mini loaves cool for a few minutes in the pan before you move them to a wire rack to cool.

You can wrap these individually and freeze for later or enjoy now!
