Beat with a hand or stand mixer until they are fluffy. Next, add the eggs and vanilla and mix until well combined. Fold in your mashed bananas. Then add in the flour mixture and mix until completely combined. Fill each mini loaf well about 2/3 full. Bake for 18-24 minutes on the center rack. Let the mini loaves cool for a few minutes in the pan before you move them to a wire rack to cool. You can wrap these individually and freeze for later or enjoy now!
