One of my favorite things about making mini banana bread is how versatile it is. You can freeze individual loaves for quick breakfasts throughout the week, wrap them up as homemade gifts, or customize them with chocolate chips, chopped walnuts, pecans, or even a sprinkle of cinnamon sugar on top before baking.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1⅓ cups mashed ripe bananas (about 3 medium bananas)

Instructions

Step 1

Preheat your oven to 350°F.

Grease your mini loaf pan with nonstick cooking spray or butter and a light dusting of flour.

Step 2

In a medium bowl, whisk together:

  • Flour
  • Baking soda
  • Salt
  • Cinnamon

Set aside.

Step 3

In a large mixing bowl, beat together the butter, brown sugar, and granulated sugar until the mixture becomes light and fluffy.

Step 4

Add the eggs one at a time, mixing well after each addition.

Stir in the vanilla extract.

Step 5

Fold the mashed bananas into the wet ingredients until evenly incorporated.

Step 6

Gradually add the dry ingredients to the banana mixture, mixing just until combined. Be careful not to overmix, as this can make the bread dense instead of tender.

Step 7

Fill each mini loaf cavity about ⅔ full.

Step 8

Bake on the center rack for 18–24 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Allow the loaves to cool in the pan for about 5–10 minutes before transferring them to a wire rack to cool completely.

Ingredients

  • 2 C Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/2 C Butter, unsalted
  • 1/2 C Brown Sugar
  • 1/4 C Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 1 1/3 C Mashed Bananas

Instructions

  • If you rather make one large loaf you can do that too, just bake for 50 minutes.
    First, preheat your oven to 350F and prep your pan. You can spray it with nonstick spray or grease and flour it. 
    In a small bowl, combine the flour, baking soda, salt, and cinnamon. Be sure to give it a quick stir so it's all combined. 
    In a large bowl, combine the brown sugar, sugar, and butter. Beat with a hand or stand mixer until they are fluffy. 
    Next, add the eggs and vanilla and mix until well combined. 
    Fold in your mashed bananas. 
    Then add in the flour mixture and mix until completely combined. 
    Fill each mini loaf well about 2/3 full. 
    Bake for 18-24 minutes on the center rack. 
    Let the mini loaves cool for a few minutes in the pan before you move them to a wire rack to cool. 
    You can wrap these individually and freeze for later or enjoy now!
