Inspired by everyone’s favorite larger-than-life demigod from Disney’s Moana, these adorable mini banana loaves are packed with sweet bananas, mini chocolate chips, and shredded coconut for a tropical twist.

Not only are they fun for Disney movie nights, but they’re also incredibly practical. Ingredients

  • ½ cup unsalted butter, melted
  • 1 large egg
  • 3 ripe bananas, mashed
  • 3 tablespoons whole milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 cups mini chocolate chips, divided
  • 2 cups shredded coconut, divided

How to Make Mini Maui Banana Bread

Step 1

Preheat your oven to 350°F.

Lightly grease your mini loaf pan with nonstick cooking spray.

Step 2

Mash the bananas until mostly smooth.

Step 3

In a large bowl, whisk together the melted butter, milk, egg, and mashed bananas.

Step 4

In another bowl, combine the flour, baking soda, and baking powder.

Gradually stir the dry ingredients into the banana mixture until just combined.

Step 5

Fold in:

  • 1½ cups mini chocolate chips
  • 1 cup shredded coconut

Do not overmix.

Step 6

Fill each mini loaf cavity about ⅔ full.

Top each loaf with the remaining coconut and mini chocolate chips.

Step 7

Bake for approximately 20 minutes, or until a toothpick inserted into the center comes out clean.

If using one standard loaf pan, bake for 45–50 minutes.

Step 8

Allow the loaves to cool for several minutes in the pan before transferring them to a cooling rack.

Serve warm with butter if desired.

  • Don’t overmix the batter.

Mini Maui Banana Bread

Ingredients

  • 1/2 C Butter, unsalted, melted
  • 1 Egg
  • 3 Bananas, ripe, mashed
  • 3 tbsp Whole Milk
  • 2 C Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 2 C Mini Chocolate Chips
  • 2 C Shredded Coconut

Instructions

  • If you don't have a mini loaf pan or want to make one large loaf, you can do that too. Just adjust the baking time to 45-50 minutes. 
    First, we are going to peel and mash our bananas. Also, set the oven to 350 F to get it preheated and ready for us. 
    Prep your mini loaf pan or large loaf pan by spraying it with a little cooking spray. Then set it aside for now. 
    In a large bowl, combine the butter and milk. It works best if the butter is melted. 
    Next, add in the egg and bananas and mix until well combined. 
    In a separate bowl, combine the flour, baking soda, and baking powder. Whisk it together. 
    Mix the flour mix together with the wet mixture until they are well combined. 
    Stir in 1 1/2 C of the mini chocolate chips. 
    Fold in 1 C of the shredded coconut. 
    Fill each mini loaf well to about 2/3 full. 
    Sprinkle a little coconut and a few mini chocolate chips on top. 
    Bake at 350 F for about 20 minutes. 
    If you are using one large loaf pan bake it for about 50 minutes. 
    Let the mini loaf cool in the pan and then remove them and finish cooling on a wire rack. 
    These are perfect warm with a little butter. They also freeze nicely too.
