Mini Maui Banana Bread

I cannot believe that we will be on a plane heading to Disney World this time tomorrow! I cannot wait. I’m super super excited!! So, to celebrate our Florida escape we made Mini Maui Banana Bread! Why mini? Because they are perfect for school lunches, snacks or even to take on an airplane with you. These are TSA approved. So if you have an early morning flight like us, you can toss a few of these in your travel bag and have a filling breakfast bread ready for whenever the hunger strikes.

To make a batch of these mini Maui banana bread you will need the following –

1/2 Butter, unsalted
1 Egg
3 ripe Bananas, mashed
3 tbsp Whole Milk
2 C Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
2 C Mini Chocolate Chips
2 C Shredded Coconut
Mini Loaf Pan

If you don’t have a mini loaf pan or want to make one large loaf, you can do that too. Just adjust the baking time to 45-50 minutes.

First, we are going to peel and mash our bananas. Also, set the oven to 350 F to get it preheated and ready for us.

Prep your mini loaf pan or large loaf pan by spraying it with a little cooking spray. Then set it aside for now.

In a large bowl, combine the butter and milk. It works best if the butter is melted.

Next, add in the egg and bananas and mix until well combined.

In a separate bowl, combine the flour, baking soda, and baking powder. Whisk it together.

Mix the flour mix together with the wet mixture until they are well combined.

Stir in 1 1/2 C of the mini chocolate chips.

Fold in 1 C of the shredded coconut.

Fill each mini loaf well to about 2/3 full.

Sprinkle a little coconut and a few mini chocolate chips on top.

Bake at 350 F for about 20 minutes.

If you are using one large loaf pan bake it for about 50 minutes.

Let the mini loaf cool in the pan and then remove them and finish cooling on a wire rack.

These are perfect warm with a little butter. They also freeze nicely too.

Inspired by Disney's Moana, these Mini Maui Banana Breads are just the right size. Filled with bananas, chocolate and coconut they are snack size perfection.
