M&M White Chocolate Cheesecake Cookies

The M&M Whtie Chocolate Cheesecake candies are back! I found them at my local Target shortly after the new year. And since I found them we have been creating some yummy recipes with them. Today, we are sharing our M&M White Chocolate Cheesecake Cookies with you. Now, these are a denser cookie that is chewy if you don’t over back them. And I’ll share a little tip with you. Be sure to press a few M&Ms in the cookie before you bake them. It makes them come out super cute. Otherwise, the M&Ms are hidden in the cookie dough and you cannot really see them.

To make these M&M White Chocolate Cheesecake Cookies you will need the following –

3/4 C Butter
1 C Light Brown Sugar
1 Egg
1 tsp Vanilla Extract
1 box White Chocolate Cheesecake Instant Pudding (3.4 oz box)
2 C Flour
3/4 tsp Baking Soda
1 tsp Salt
1-2 bags White Chocolate Cheesecake M&Ms

This recipe works best in a stand mixer, so if you have one bust it out. Otherwise, you can use a hand mixer for the beginning and mix the rest by hand when it gets too thick.

You will also need –

Baking Sheet
Parchment Paper
Hand mixer or Stand mixer
Small Cookie Scoop

First, you are going to want to preheat your oven to 350 degrees and move the rack to the center position.

Next, in your stand mixer using the paddle attachment, cream to together the butter and brown sugar. This works best if your butter is at room temperature. If you forgot to take the butter out, pop it in the microwave for 15-30 seconds to soften it up.

Then add the egg and vanilla extract to the mix and mix until combined.

Add in the baking soda, salt, and pudding mix. Be sure to use a spatula and scrape the sides of the bowl and bottom so everything gets combined and mixed well. This may mean you need to pause the mixer and remove the bowl from the stand to do this.

Lastly, gradually add in the flour mixture. If you are using a hand mixer this will be the part you’ll need to switch to hand mixing.

By hand, stir in the M&M White Chocolate Cheesecake candies. Reserve some for topping the cookies or use an additional bag of candies for toppings.

With the small cookie scoop, scoop out some cookie dough and place on your cookie sheet that you have lined with parchment paper.

Take a few of the M&M White Chocolate Cheesecake candies and place them on the top of the cookie. These cookies do not spread much so you are going to want to press them down a little.

Bake for about 8-12 minutes, until the edges are slightly golden brown.

Remove from the oven and let cool on the cookie sheet for about 5 minutes then transfer to a wire cooling rack.

Once the cookies have cooled store them in an airtight container, this will help keep them soft and not dry out.
