We were busy this fall, like crazy busy and barely home in the evenings. That lead to a lot of eating out. But with the New Year, I am determined to get back to cooking dinner at home like we used to. I’m also determined to create some new recipes that I can use in my Ninja Foodi. I love using my Foodi, I’ve just gotten out of the practice of meal planning and cooking. So tonight, our first meal fo the New Year in our Ninja Foodi is Bacon Cheeseburger Mac and Cheese! Why? Because Peyton loves bacon cheeseburgers and recently we visited The Sugar Factory where she had the Big Cheesy Bacon Cheeseburger so I thought I would make this in honor of that little gem.
Here is what you’ll need to make your own delicious batch of Bacon Cheeseburger Mac and Cheese –
1 lb Extra Lean Ground Beef
1 tsp Butter, unsalted
10.5 oz can Condensed Beef Broth
2 C Milk, whole preferred for a creamy texture
1 box Large Elbow Macaroni
10.5 oz Cheddar Cheese Soup
10.5 oz Cream of Bacon Soup
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Onion Powder
4 C Pizza Blend Cheese, Mozzarella, Cheddar and Monterey
1/2 C Real Bacon Bits
Ninja Foodi
If you don’t have a Ninja Foodi, don’t worry! You can make this in other pressure cookers.
The first step, layout your ingredients as the recipe moves fairly quickly. I like to be prepared so I have everything I need right at my fingertips.
Turn the Ninja Foodi to sautee med-high and add the butter.
Once the butter is melted, add the ground beef.
You are going to cook the ground beef until it is nearly done, just a little pink left. Be sure to break apart the ground beef as your cooking it. You want the pieces to be bit size.
When there’s just a little pink left add the beef broth and milk. Stir to combine.
Pour in the box of large macaroni noodles and stir them to cover them with the milk and broth mixture.
Next, add the cheddar cheese soup, cream of bacon soup, salt, pepper and onion powder. Do not stir!
Secure the Ninja Foodi pressure cooking lid and press the pressure button. Set for high and 4 minutes. Be sure your steam vent is closed.
When the timer goes off, flip that steam vent open for a quick release.
Stir everything together then add in the cheese. You may want to add the cheese a cup or two at a time so it will melt and be easier to stir.
Lastly, mix in your bacon bits. We may have used a little more than 1/2 cup because Peyton really loves bacon.
Now you’re ready to enjoy!
This dish was a huge hit in my home. And guess what? There are leftovers! So that’s lunch today. It does reheat nicely too.
