Ninja Foodi Creamy Garlic Parmesan Chicken

It’s been a while since I’ve posted a new Ninja Foodi recipe so I thought I would do another! Everyone needs a few good recipes that can be pulled together in under 30 minutes and this is one of them. It’s a crowd-pleaser, always a hit when I serve it. I never have any leftovers, which is good and also bad. This creamy garlic parmesan chicken takes less than 30 minutes from start to finish and is so easy to make that my 11 year old can do it.

Ninja Foodi Creamy Garlic Parmesan ChickenTo make a batch of my Ninja Foodi Creamy Garlic Parmesan Chicken you will need the following –

2 TBSP Butter
1 Yellow Onion, small and diced
4 Garlic Cloves, minced
1/2 C Chicken Broth
1/2 tsp Garlic Powder
1/4 tsp Pepper
1/3 tsp Kosher Salt
8 oz Baby Bella Mushrooms, sliced
1.5 lbs Chicken Breast, boneless & skinless
1 C Half and Half
2 TBSP Flour
1/2 C Parmesan Cheese, grated
3 oz Spinach (optional)

I like to serve this dish over mashed potatoes with a side of veggies but you could also do noodles or rice, whatever your family prefers.

To start, turn your Foodi on saute high. Once the pot is hot, give it a few minutes, toss in your butter, and let it melt.

While the butter is melting, dice the onion. I like to use a food processor so the onions are nice and little. It makes them barely detectable to picky eaters.

Once the butter is melted add in the diced onions. Sautee them, stirring them frequently for about 3-4 minutes or until they are translucent.

Add in the minced garlic and saute for 30 more seconds.

Next, stir in the chicken broth, garlic powder, pepper, salt.

Then add in the mushrooms and chicken. Make sure the chicken is no thicker than 1/2 inch. You make need to slice your chicken breast in 2 if they are thick.

Ninja Foodi Creamy Garlic Parmesan ChickenPlace the pressure cooker lid on the Ninja Foodi and set it for pressure, 7 minutes on high.

Once the cooking time is up, do a natural release for 10 minutes and then open the pressure valve to release the remaining pressure.

When the pressure has fully released, remove the lid and set it aside.

With a pair of tongs, gently remove the chicken and place it on a plate. You will want to either cover the chicken to keep it warm or place it in the microwave and shut the door.

Place the half and half in a microwave-safe dish and heat for 45 seconds in the microwave.

Whisk the flour into the warm half and half until smooth and all lumps are gone.

Turn the Foodi back on sautee, high, and whisk in the half and half mixture.

Ninja Foodi Creamy Garlic Parmesan ChickenStir frequently until the sauce thickens, about 3-5 minutes.

If you are using spinach this is the time to toss it in the pot and stir it around while the sauce is thickening.

Once the sauce is thickened, turn off the Foodi, add the chicken back to the pot and stir in.

Serve with your favorite side dishes and enjoy!
