School is back in session and parents are looking for quick and simple dinners to prepare. Whether you are distance learning, hybrid learning, or in-person learning, time is precious. We are all trying to juggle a million things at once and there is not enough time in the day. And if you’re like me, you still want to put a home-cooked meal on the dinner table.
One way I am able to put a homecooked meal on the table most weeknights is by using my Ninja Foodi. Using the pressure cooking function really saves me a ton of time. But I can also cook some amazing dishes that are full of flavor and a hit with the entire family. Tonight we are having ribs in the Ninja Foodi. I am making Ninja Foodi Pineapple BBQ ribs in less than an hour!
To make these mouth-watering Ninja Foodi Pineapple BBQ Ribs you will need the following –
1 large rack of pork side ribs
2 can crushed pineapple (20 oz cans)
1 C BBQ Sauce
3/4 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Salt
1/4 tsp Pepper
First, in a small bowl mix together the garlic powder, onion powder, salt, and pepper.
Next, sprinkle a generous amount of the seasoning all over the pork ribs.
Cut the ribs into pieces that will fit inside your Ninja Foodi.
Drain both cans of the pineapple but keep the crushed pineapple in their respective cans. The juice can be combined.
Pour 1 C of the pineapple juice and 1 can of crushed pineapple into the Ninja Foodi.
Place the pressure cooking lid on the Ninja Foodi and make sure the vent is in the sealed position.
Set the pressure cooker on high for 25 minutes.
While the ribs are cooking it’s time to make the BBQ sauce.
In a small saucepan combine the can of crushed pineapple, 1/3 C of pineapple juice, and the BBQ sauce. You can use any BBQ sauce you like for this recipe. If you do not have 1/3 C of pineapple juice you can use water as a replacement. Bring the mixture to a boil then let it simmer until it thickens.
When the pressure cooker is done, let it to a natural release for about 5 minutes then carefully move the vent to the open position.
Take a large sheet pan and cover it in tin foil. Trust me, you want to do this or you will be scrubbing for hours.
Place the ribs on the sheet pan and cover them with the BBQ sauce.
Broil the ribs in the oven for about 5 minutes. You want to have a nice caramelized crust on the ribs but you need to pay close attention to them so they don’t burn.
Once they are done, remove them from the oven and let them rest for about 5 minutes.
Some great side dishes to go with these pineapple BBQ ribs are some baked beans, potato salad, coleslaw or a salad.
A very simple dinner that can be made in under an hour.
