You all know I LOVE my Ninja Foodi and I also love Perdue chicken. Tacos are pretty high on my list as well. So today, I made Salsa Chicken Tacos with some Perdue chicken IN my Ninja Foodi! Everything happens right in the Ninja Foodi so cleanup is a snap. It literally took me less than 5 minutes to clean out my Ninja Foodi when I was finished. These take less than 30 minutes which is amazing for a weeknight dinner option. I don’t get home from work until 6 pm so I like to have dinner on the table as quickly as possible during the week. These Salsa Tacos can be on the table by 6:30!
To make your own Salsa Chicken Tacos you will need the following –
1 1/2 lbs Perdue Chicken Breasts, boneless and skinless
2 tsp Ancho Chili Powder
1 tsp Ground Cumin
1/2 tsp Ground Coriander
1/4 tsp Salt
1/4 tsp Ground Pepper
1 clove Garlic, minced
1 C Fire Roasted Salsa
2 tbsp Cilantro, freshly chopped
Ninja Foodi
Tortillas
Shredded Cheese
Sour Cream
Tomatoes
Salsa
Any other topping you desire for your tacos
If you are trying to save time like me, much of the prep can be done the night before. You can get all your taco fixings diced, shredded and in bowls ready to go. Just place a little plastic wrap over them to help keep them fresh.
The first step of this recipe is to set up your Ninja Foodi! Plug the Ninja Foodi in and make sure you have the pressure cooking lid.
Next, in a small bowl combine the ancho chili powder, cumin, coriander, salt, and pepper. Make sure to stir it together to ensure it’s mixed well.
Coat each side of your chicken in the spice mixture you just made.
Place the chicken in the Ninja Foodi and sprinkle the garlic over the chicken.
Pour the fire roasted salsa over the chicken. Be sure to cover the chicken with the salsa.
Next, place the pressure lid on the Ninja Foodi with the vent closed.
Set it to pressure, high, 13 minutes.
When your Ninja Foodi beeps, do a quick release (carefully turn the vent to open)
Once the pressure is released, open the Ninja Foodi and remove the chicken.
Shred the chicken. I used two forks to shred my chicken.
Then return the chicken to the Ninja Foodi.
Add the cilantro and stir.
Now you are ready to serve!
Take a tortilla and scoop some chicken onto it, add your favorite toppings and enjoy!
This also reheats very nicely. Be sure when you are storing leftovers to keep the juices from the pan and cover tightly.
