I don’t know about your kids, but Peyton loves blueberries. She can sit down and eat a whole container and still be asking for more. So when we saw the movie Abominable and the blueberries got huge and exploded I had an idea to make a no-churn blueberry ice cream. I knew it would be a hit with Peyton and probably with other fans of Abominable. Plus, it’s a fairly simple recipe so the kids can help! Little can help with everything but the first step and the bigger kids can help with all the steps. It’s a great way to get your little ones in the kitchen and teach them about cooking too.
So to make this yummy Abominable no-churn blueberry ice cream you will need the following –
6 cups Fresh Blueberries
1/4 cup white sugar
1 small to medium-size lemon
3 cups Heavy Whipping Cream
14 oz Sweetened Condensed Milk (1 can)
Zester
Medium Pan
Food processor
Large Loaf Pan
Handmixer
Spatula
Large Bowl
This recipe is made in 2 separate steps that are several hours apart. So definitely start this one a day before you want to enjoy it.
First, take 4 cups of the blueberries and puree them in the food processor. I used our Vitamix to puree the blueberries, took me less than 15 seconds.
Next, combine the pureed blueberries, sugar, juice from the lemon and lemon zest from the lemon in the medium pan. Bring to a boil, then lower heat and simmer for about 15 minutes.
Now it’s time to let the mixture cool down. You can either leave it in the pan and once the pan is cool transfer it to the fridge for a few hours. Or you can transfer it to a glass bowl and let it chill for a few hours until it’s cold.
Once the blueberry mixture is chilled it’s time to make the ice cream!
In another large glass bowl, pour 3 cups of heavy whipping cream and whisk with a hand mixer until you have stiff peaks. This may take a while. Mine took about 10 minutes until my peaks started to form.
Now it’s time to fold in the blueberry mixture and the sweetened condensed milk until it is completely combined.
Lastly, take a cup of those blueberries and toss them whole into the mix! This is optional. I just know we like ice cream with chunks of fruit so this was a must for my family.
Pour the mixture in a large loaf pan. Optional – top with a few blueberries.
Place in the freezer until frozen firm – about 6 hours.
When you are ready to enjoy, scoop the blueberry ice cream into a bowl, garnish with some fresh blueberries and enjoy!
This ice cream is simple and fun to make. Peyton helped with every step after the stove. She loved watching a liquid turn into a stiff mixture, she thought that was fascinating.
