Summer is here! The days are definitely warmer and the fourth of July is right around the corner. Depending on how your little corner of the world is doing you may be celebrating with immediate family only or just a few people. Either way, you are probably going to be having a little dinner or snacks this holiday weekend. These patriotic strawberry cheesecake bites are perfect for your holiday celebration because they can be used as an appetizer or dessert, plus they only take a few minutes to make!
These patriotic blueberry strawberry cheesecake bites fulfill the red, white, and blue requirements while also being light and refreshing. Whenever I bring this to a gathering they are the first dish gone, so I know they are a hit!
To make a batch of your own patriotic blueberry strawberry cheesecake bites you will need the following –
1 pkg Cream Cheese, 8 ounces room temperature
1/3 to 1/2 C Powdered Sugar
1/2 tsp Vanilla Extract
1 C Cool Whip
Fresh Strawberries, sliced in half
Fresh Blueberries, the bigger the better!
This recipe moves quickly and takes less than 15 minutes to make.
First, wash and try your berries.
Slice your strawberries in half, I also suggest taking the tops off. Then people can just pop them in their mouth and enjoy. Plus, you won’t find strawberry tops all over later on, trust me on this one.
Next, place the cream cheese, powdered sugar, and vanilla in a bowl and beat until fluffy. It works best in a stand mixer but if you only have a hand mixer it’ll work, just may take a smidge longer. Taste a little and see if it’s sweet enough, if not, add a little more powdered sugar.
Fold in the cool whip.
Once you have the perfect consistency and flavor, it’s time to pipe the cheesecake mixture into the strawberries!
Grab a pastry bag and a large tip. I used Wiltons 1M. Fill the bag with the cheesecake filling and pipe it on each strawberry.
Place a blueberry or a few blueberries depending on their size on top of the cheesecake filling.
Place in the fridge to keep chilled.
Serve and enjoy!
