Peppermint Brookies (Easy Christmas Cookie Brownies)

Peppermint Brookies (Chocolate Peppermint Cookie Brownies)

If you can’t decide between brownies and cookies, why not have both? These Peppermint Brookies combine a buttery sugar cookie crust with rich chocolate brownies, chocolate chips, peppermint extract, white chocolate drizzle, and festive peppermint M&M’s for the ultimate Christmas dessert.

Every year these are one of the first treats to disappear from my holiday dessert table. The combination of chewy sugar cookies and fudgy brownies creates two amazing desserts in one bite. The peppermint flavor is subtle enough that even people who aren’t huge mint fans usually come back for seconds.

One of my favorite shortcuts is using refrigerated sugar cookie dough when I’m short on time. It tastes fantastic and makes these holiday brookies even easier to prepare.

Whether you’re baking for a Christmas cookie exchange, holiday party, bake sale, or simply filling a dessert tray, these festive brookies are always a crowd favorite.

Ingredients

Sugar Cookie Layer

  • 1 package sugar cookie mix
  • Ingredients called for on the package

Shortcut: Use one roll of refrigerated sugar cookie dough.

Brownie Layer

  • 1 package brownie mix
  • Ingredients listed on the package
  • ¼ teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips

Topping

  • ½ cup white chocolate chips
  • 1 package Peppermint White Chocolate M&M’s
  • Holiday sprinkles

Equipment

  • 9×13-inch baking pan
  • Aluminum foil
  • Nonstick cooking spray

Sugar Cookie Layer

This creates a soft, buttery base that makes these brownies extra special.

Peppermint Extract

Only a small amount is needed for a cool holiday flavor that doesn’t overpower the chocolate.

Peppermint M&M’s

These add festive color, crunch, and extra chocolate in every bite.

White Chocolate

A drizzle of white chocolate makes these brownies look bakery-worthy.


How to Make Peppermint Brookies

Step 1: Prepare the Pan

Preheat the oven to 350°F.

Line a 9×13-inch baking pan with aluminum foil.

Spray generously with nonstick cooking spray.


Step 2: Make the Cookie Layer

Prepare the sugar cookie dough according to the package directions.

Press the dough evenly into the prepared baking pan.


Step 3: Make the Brownie Batter

Prepare the brownie mix according to the package.

Mix in the peppermint extract.

Fold in the semi-sweet chocolate chips.

Pour the brownie batter over the cookie dough.

Spread evenly.


Step 4: Bake

Bake for 35–40 minutes until a toothpick inserted near the center comes out with only a few moist crumbs.

Allow the brownies to cool for about 1 hour.


Step 5: Slice

Lift the brownies from the pan using the foil.

Slice completely before decorating.

This prevents the white chocolate from cracking later.


Step 6: Decorate

Melt the white chocolate in a microwave-safe bag or bowl using 30-second intervals.

Drizzle over the brownies.

Immediately sprinkle with:

  • Peppermint M&M’s
  • Holiday sprinkles

Allow the chocolate to harden before serving.

Peppermint M&M Brownies

Ingredients

  • 1 pkg Sugar Cook Mix and ingredients required on package
  • 1 pkg Brownie Mix and ingredients required on package
  • 1/4 tsp Mint Extract
  • 1 C Semi-Sweet Chocolate Chips
  • 1/4 C White Chocolate Chips
  • 1 pkg M&Ms White Chocolate Peppermint Candies
  • Holiday Sprinkles

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
    Next, make the sugar cookie dough according to the directions on the package.
    Prep the brownie pan by lining it with tin foil and spraying the tin foil with cooking spray. Trust me, this will make removing them so much easier and cleanup will be a breeze.
    Press the sugar cookie dough into the brownie pan creating an even layer on the bottom of the pan.
    In a stand mixer, use the paddle attachment and make the brownie batter according to the directions on the box.
    Add in the mint extract and mix well.
    With a spoon, stir in the chocolate chips.
    Pour the brownie batter on top of the sugar cookie dough in the brownie pan.  Spread out for an even layer.
    Bake at 350 degrees for 35-40 minutes on the center rack.
    Remove from the oven and let cool for 1 hour.
    Remove the brownies from the pan by pulling the brownies out by the tinfoil.
    Slice the brownies to the desired size.
    Melt the white chocolate in the microwave in 30-second intervals in a zip lock baggie. Once melted, snip a corner off the bag. Drizzle the white chocolate across the brownies.
    Sprinkle the Peppermint M&Ms on top fo the melted chocolate, this will make them stick. 
    Sprinkle the holiday sprinkles on top too.
    Let the white chocolate harden and then enjoy.
    You can arrange them on a platter or place in an airtight container for later.
