Peppermint M&M Brownies

These brownies are a HUGE hit whenever I make them. The peppermint is very subtle but leaves a refreshing cool taste afterward. A few tips for this recipe, if you are crunched for time you can use a sleeve of premade sugar cookie dough to save some time. I’ve done it a few times and it turns out perfectly fine.  Be sure to cut your brownies before you drizzle the white chocolate on them. If you slice them after you’ve drizzled the chocolate, the chocolate will pop off the brownie.

Peppermint M&M BrowniesTo make these Peppermint M&M Brownies you will need the following –

1 package Sugar Cookie mix and whatever the package calls for to make the dough
1 package Brownie Mix and the ingredients on the package to make the brownies
1/4 tsp Mint Extract
1 C Semi-Sweet Chocolate Chips
1/2 C White Chocolate Chips
1 package M&M White Chocolate Peppermint Candies
Holiday Sprinkles
9×13 Brownie Pan
Tin Foil
Cooking Spray

Preheat your oven to 350 degrees Fahrenheit.

Next, make the sugar cookie dough according to the directions on the package.

Prep the brownie pan by lining it with tin foil and spraying the tin foil with cooking spray. Trust me, this will make removing them so much easier and cleanup will be a breeze.

Press the sugar cookie dough into the brownie pan creating an even layer on the bottom of the pan.

In a stand mixer, use the paddle attachment and make the brownie batter according to the directions on the box.

Add in the mint extract and mix well.

With a spoon, stir in the chocolate chips. You can also sprinkle additional chocolate chips on top of the brownie batter.

Pour the brownie batter on top of the sugar cookie dough in the brownie pan.  Spread out for an even layer.

Bake at 350 degrees for 35-40 minutes on the center rack.

Remove from the oven and let cool for 1 hour.

Remove the brownies from the pan by pulling the brownies out by the tinfoil.

Slice the brownies to the desired size.

Melt the white chocolate in the microwave in 30-second intervals in a zip lock baggie. Once melted, snip a corner off the bag. Drizzle the white chocolate across the brownies.

Sprinkle the Peppermint M&Ms on top fo the melted chocolate, this will make them stick.

Let the white chocolate harden and then enjoy.

You can arrange them on a platter or place in an airtight container for later.
