Pixar’s Soul Cookies

To celebrate Pixar’s Soul release on Disney+ today, we made cookies! We like to call these Soul Cookies. These little blue treats are a perfect snack, along with a glass of milk, while you and your family watch Pixar’s Soul this weekend on Disney+.

To make your own batch of Soul Cookies you will need the following –

1 box Vanilla Cake Mix
1 tsp Baking Powder
2 large Eggs
1/3 C Vegetable Oil
Blue Food Coloring
1/2 C Sugar
1/2 C Powdered Sugar

You do not need to preheat your oven right away. There is a little time the dough needs to chill, so while it’s chilling is the perfect time to preheat.

First, in a large bowl, combine the cake mix and baking powder. Give it a good stir with a whisk to mix it together well.

I did use a vanilla cake mix but you can use any white or yellow cake mix that you desire. Just note, if you use a white or yellow cake mix there will be no flavor. So you may want to add a dram of your favorite flavor. I was thinking of adding cotton candy but we did not have any on hand.

Next, add in the eggs, vegetable oil, and blue food coloring. Stir until well combined. You do not want to use a hand or stand mixer as it will mix the dough too much.

Set the dough in the fridge to chill for 15 minutes.

While the dough is chilling, now is the time to preheat the oven. Preheat the oven to 350F. Also, line your baking sheet with parchment paper.

Take 2 small bowls and place the sugar in one and the powdered sugar in another.

Once 15 minutes is up it’s time to start making those cookies!

Take a medium or small cookie scoop and scoop some dough out of the bowl. Roll it into a ball, then roll in the sugar first, then the powdered sugar, and place on the baking sheet.

Set the cookies about 2 inches apart. They will spread a little.

Bake on the center rake of the oven for 8-10 minutes. Remove the baking pan from the oven and let the cookies cool on the pan for about 5 minutes. Then transfer them to a cooling rack to finish cooling.

These cookies are chewy and soft. You’ll need to play around with the bake time depending on your oven and how big your cookies are. You want the bottoms first but the tops soft.

Also, be sure to put that dough back in the fridge while you wait for the first batch to bake off. The dough will bake best when it is chilled. If the dough is warm it will spread much further and you will end up with flat, runny cookies.

These cookies will keep for a week if kept in an airtight container.

Bake a batch, grab a glass a milk and turn on Pixar’s Soul on Disney+ this weekend.
