Quick and Easy Mini Lemon Tartlets

Now that warmer temperatures are here to stay and the grass is turning green here in the Midwest it’s time to start thinking of those spring desserts. Lemons always come to mind when I think of spring, I think it’s because we always had lemon meringue pie for Easter so I just associate it with spring.  Today I am going to share with you this quick and easy mini lemon tartlet recipe. It doesn’t take much time but it sure does look impressive.

Mini Lemon TartletsTo make these Mini Lemon Tartlets you will need the following –

12 mini tart shells (I used Tenderflake)
1 box of lemon dessert mix plus what it calls to make it
Raspberries

Mini Lemon TartletsThese do come together rather quickly so be sure to lay out your ingredients before you start.

Preheat your oven to 375 degrees and move the rack to the center position.

Prepare the lemon dessert mix according to the directions on the box.

Place the mini tart shells on a baking sheet.

Bake the mini tart shells (empty) for about 5 minutes.

Once the 5 minutes are up, remove the mini tart shells from the oven and fill with the lemon dessert filing.

Bake for an additional 15 minutes.

Remove from oven and cool.

Mini Lemon TartletsYou can serve them with a fresh raspberry for garnish and a sprinkle of sugar.
