Sheet Pan Dinners : Chicken Fajitas

Another quick, easy and simple weeknight dinner with minimal cleanup! That’s the type of meal I like to make during the week. Weeknights are full of homework, afterschool activities and wanting to spend time with family. No one wants to spend a ton of time in the kitchen. With this Chicken Fajita recipe, you won’t be spending much time at all in the kitchen. It’s a chop, slice, toss on pan, put in oven and walk away type recipe!

You will need the following –

1 lb Chicken Breasts, sliced lengthwise thinly
1 green pepper, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 onion, halved and sliced
Fajita seasoning packet
Cooking Spray

Equipment you’ll need –

Large Sheet Pan
Sharp knife
Cutting Board
Tinfoil


Start off by preheating the oven to 400 and moving the rack to the middle position of the oven.

Next, slice all your vegetables and place in a large bowl.

Then slice your chicken and place in the same bowl.

Sprinkle the fajita seasoning over the bowl and stir until all the vegetables and chicken and a nice coating.

Tip – you may want to pick up an additional seasoning packet just in case you need a little extra.

Next, spread the vegetables and chicken on a large sheet pan that is covered in tinfoil.

Spray with a thin layer of cooking oil.

Place on the middle rack in oven and bake for about 25-35 minutes. You want to make sure the chicken is cooked and the vegetables are starting to brown with a crispy edge.

Take out of the oven and let cool for a few minutes.

Chicken Fajitas Zero Weight Watchers PointsRemove from the sheet pan, pull up the tinfoil and toss. Cleanup is pretty much done! No scrubbing pans or soaking them.

This isZERO points on Weight Watchers! If you look for low carb tortillas you can add those for a few points. There are also several salsas that are zero points as well. But all cheese, sour cream and other toppings may or will have points you will need to take into consideration.

Chicken FajitasThis is perfect to top a salad, eat by itself or serve with a tortilla.

Sheet Pan Meal: Chicken Fajitas

Simple Chicken Fajitas made on a sheet pan. Minimal cleanup and mess. Plus ZERO Weight Watchers points!
