Slow Cooker Carnitas

It’s another Taco Tuesday! Today we are going to make Carnitas in the slow cooker. It takes a few minutes to prepare before we walk out the door and cooks all day long. When you get home, it takes just a few minutes to shred and broil for crispiness in the oven. You will have dinner on the table in less than 15 minutes! Perfect for nights you are running the kids to activities.

To make a batch of these delicious slow cooker Carnitas you will need the following –

4 lb Boneless Pork Roast
1 C Pilsner Beer or Chicken Stock
1 White Onion
4 Cloves Garlic
1 tbsp Chipotle Powder
2 tsp Ground Cumin
1 tsp Black Pepper
1 tsp Chili Powder
1 tsp Kosher Salt

First, trim the fat off the pork roast and cut it into 3-inch chunks.

In a small bowl, combine the chipotle powder, Cumin, pepper, chili powder and salt.

Place the pork roast into the slow cooker.

Pour the beer into the slow cooker.

Dice the onion and add to the slow cooker.

Pro tip – My family prefers really small onions so the kids don’t notice them. I use a food processor to get them super fine. 

Mince the garlic and sprinkle over the pork roast.

Sprinkle the seasoning mixture over the roast.

Put the cover on and cook low for about 7-9 hours or high for 4-5 hours.

You will know the pork is done when it is easy to shred.

Remove the pork from the slow cooker and shred with 2 forks.

Spread the shredded pork on a baking sheet in an even layer. Drizzle a little bit of the juices on top of the pork and broil for 3-5 minutes, just until the edges are crisp.

Place the shredded pork into a bowl and drizzle a little more juice on it. Give it a good stir and enjoy!

Your carnitas will be crispy and perfect for tacos!

These clow cooker carnitas cook all day. Perfect for those crazy week nights.
